toddler mini french bread pizzas

I am constantly looking for new lunch ideas for Miles to eat. Dinner is pretty easy because he just eats whatever we eat. Lunches are harder. We now have a nanny watching Miles in our home so he doesn't go to daycare and I'm not home with him everyday. I've made mini pasta lunches for him like the ones I've made for us but I'm sure that's getting boring for him. He also eats mac and cheese and grilled cheese for lunch. While looking around online Pinterest I found these. Here is my version, the cost break down and nutritional information.


Ingredients:
8 hot dog buns, split
pizza sauce
pepperoni
shredded mozzarella cheese


Directions:


Preheat oven to 350F.  
Split hotdog buns in half lengthwise and arrange on a foil lined baking sheet. 
Spread one tablespoon of pizza sauce on each bun. 
Place two slices of pepperoni on each bun.
Top with mozzarella cheese, I used about 10 grams of cheese for each pizza which amounted to a large pinch between my thumb and first two fingers. I don't expect you to measure, but I needed to do this to get the nutritional information. 


Bake 10-12 minutes or until heated through and cheese is melted. 
Once they have cooled place pizzas (on a different baking sheet) in the coldest part of your freezer (the bottom) and freeze. 
Place in a zip top bag, label with the date and toss in your freezer. 


Cost break down:
1 package of hot dog buns - $0.89
1 jar of pizza sauce - $0.99
1 bag of shredded Italian style cheese - $2.99
1 package of pepperoni - $1.99
total cost - $6.86
Cost per pizza:
half a hot dog bun - $0.06
1 tablespoon of pizza sauce - $0.04
10 grams of Italian style cheese - $0.09
2 slices of pepperoni - $0.05
cost per serving- $0.24
total cost for 16 servings - $3.84

how to hire a nanny

Bear with my while I compose this post on my phone. Too much going on here lately. It's 11:20pm on Tuesday and I haven't posted yet this week...so I need to do something.

We were very lucky that for (almost) one year a close friend was able to watch Miles along with her son. The boys are eight days apart and (typically) love spending time together. In December I started to feel our arrangement was no longer working so I set out on the task of finding a nanny for Miles. My deadline was before we left to visit family for Christmas and the new nanny would start in January when we returned from our trip. 

I did not want Miles in daycare. Too many people I know with kids in daycare often have sick children. I did not want to deal with that. Plus daycare is expensive. I wanted someone to watch Miles in our home. Nanny's are also expensive. Damn. 

I initially placed a classified ad in our local online newspaper. I received several responses and set up interviews with two young women.  The first young woman I met with had a two month old who would also come to the house and the second young woman had limited formal experience with watching children. 

I contacted a few friends in the area and asked about their childcare experiences. I decided to set up a care.com account and place an ad. And then I forgot about it. After a week of no responses from the other ad and no contact from the young woman I was considering hiring (the one with limited experience) I decided to check care.com and start sifting through he caregiver profiles then I realized that people had responded to my ad but care.com did not notify you by email. Whoops. 

When I started reading responses I discovered that you cannot reply to people's messages unless you have a PAY account. Are you f-ing serious?!? They also block contact information. A one month subscription was roughly $40. 

I was not amused. I decided to pony up the money since I had no other prospects and my deadline was two weeks away. I set up interviews with six other women. One was a no show/no call. That was irritating. One was a heavy smoker. Sorry but no go. One was very large and had a hard time getting up from my couch and I was concerned about her ability to play with Miles down on the floor or walk him to the park. Another had another job that she needed to get to after watching Miles. One was seventeen. SEVENTEEN. And the last one, who was really the first of this group I met with, was perfect. She was a stay at home mom of a Kindergartener and was getting bored at home. She had always worked in daycares or childcare. Perfect. 

We decided on a daily rate rather than a hour rate and the rest is history. So far Miles seems to really like her and she likes him.

How to hire a nanny: 
1. Ask around and get referrals from friends and family. 
2. Place a classified ad or ad on care.com or similar service. 
3. Set up interviews. Interview at least 3 people and probably not more than 10.  
4. Consider your options and choose a caregiver. Perhaps do a trial day if you are having a difficult time deciding. 
5. Decide on pay and arrangements.

toddler nutrition


One of the things that has always driven me crazy about being a mom is how much and what Miles is eating. I obsessed over how much breast milk he was drinking as an infant and how often. I'm surprised I wasn't committed. I'm also surprised that my supply kept up with my neurotic obsessing but it did. 

I started Miles on purees around four months, which was probably a bit early because he wasn't very good at eating until he was closer to six months (which is what most pediatricians now recommend). He progressed fairly quickly with eating on his own and around eight months of age he was picking up foods and feeding himself. We still went on with the purees for a bit and yogurt, but for the most part he was feeding himself. 

After about ten months he was consistently feeding himself and I rarely had to feed him. I started making him smoothies on a regular basis and that was an easy, quick breakfast. Now that he is fourteen months old he is obviously still feeding himself and working on using utensils. But I'm also wondering if he's getting adequate nutrition. The kid loves fruit, no joke, he could probably live off of those applesauces pouches if I let him. 

So to ease my mind about how much of what kinds of food Miles is eating I looked around on a few websites and gathered these general guidelines for toddlers. 


Fruit – 2-3 servings (1/3 cup = 1 serving)
Veggies - 2-3 servings (1/3 cup = 1 serving)

Carbs – 5-6 serving (1/2 slice or ¼ cup = 1 serving)
Protein – 2 servings (1 oz or ¼ cup, 1 egg 1 serving)
Dairy – 3-4 servings (4 oz milk or yogurt, ½ oz cheese 1 serving)



And then I decided to make this chart so I could check off how many servings he eats from each group. Crazy right? I don't care. I printed this chart out and put it in an old picture frame. After hot gluing some super strong magnets to the back I placed it on the fridge and then used a dry erase marker to cross of which food Miles ate today. 

I think he did pretty well today. What do you obsess over with your children (or self)?

tips for air travel with toddlers

Ok, so it’s been a while since I post. So sue me. We recently traveled by plane to Ohio from Houston. Which lead me to the idea for this post. Real travel tips for travelling with toddlers. First I’m going to give you the run down of how our two travel days went and then my tips.

Our flight out of Houston was on a Friday morning at 7:20am. We were planning on leaving the house around 5:30am so we could be at the airport by 6:00am, approximately one hour before boarding began. Miles went to sleep at his regular time the night before and I waited until 5:00am to get him from his crib, which was only two hours before his regular wake up time. I fed Miles his morning milk before we left for the airport and I packed several snacks for him including applesauce pouches and Nutrigrain bars. I did not take extra milk because Miles doesn’t typically drink another bottle until 2:00pm and I figured we would be home by then or somewhere we could buy milk (like Starbucks).


This trip we decided to not take our stroller, not even the umbrella stroller. Instead I had purchased Miles this cute backpack that also had a leash. It wasn’t a horrible experience without the stroller, but we did end up holding and carrying him a lot, especially through security. Once we made it to the gate my husband decided to forage for food (and coffee), which meant Miles and I were at the gate by ourselves and all he wanted to do was RUN. The leash made for an interesting experience and some interesting disapproving looks.


Once we got on the plane Miles was pretty good because we lucked into getting a seat for him since the two seats next to use were empty. We started watching Despicable Me once we took off and within thirty minutes Miles was sleeping on me.  

I think he slept for an hour and then spent the majority of the flight in his own chair constantly opening his seatbelt. We watched some more of the movie and ate some snacks.

Before I knew it we were told we were going to be landing soon. Sweet! We took our time getting off the plane and Miles was able to walk off the plane himself. Too cute.  A quick trip to the restroom and then to baggage claim and home.

Needless to say our return flight to Houston did not go like this…at all. We flew out of Cleveland on New Year’s Day. No big deal right? Well our flight was at 5:50…am. It should have started boarding at 5:15am, which meant we needed to be at the airport around 4:45am. We needed to leave the house around 3:45am…on New Year’s Day. Needless to say I got about two hours of sleep and I think my husband stayed up all night. My dad, who drove us to the airport, didn’t sleep either. Miles ended up waking up on his own around 3:30am because of all the noise we were making going up and down the stairs (my dad’s stairs are REALLY loud). I was hoping to take Miles from his crib to the car and have him stay asleep. Ha. He was more awake than the four adults in the car. I held off on his milk until we got to the airport and our gate.

Before we went to bed for the night we knew that the flight had been pushed back an hour to 6:45am, but you never know what is going to happen so we still got to the airport in time for the original flight time. Getting through security was rather comical. We had so much stuff. My husband travels with two lap tops, so that’s two bins, plus one for our coats, and one for Miles’ bag and applesauce pouches and milk. We also had my diaper bag, my husbands book bag, and two carry on bags. Whew. Two people cut in front of me as I was pushing all of our crap through the x-ray thing. One was a pilot and one was an airport worker. Uh…kiss my ass.   


Since it was so early and therefore empty at the airport I let Miles run around for a bit after he finished his milk. The wait at the gate didn’t seem horribly long and they were able to move us up to 6:30am. We boarded the plane and did not luck out into getting an empty seat for Miles. This plane was jam-packed. We tried watching another movie (Horton Hears a Who) but Miles wasn’t really into it. Then we played musical parents. Miles kept going from me and my husband until I was finally able to get him to take a nap (so I could also take a nap). My husband thinks we napped for an hour but it only felt like 5 minutes. After his nap it was back to musical parents and trying to watch a movie. Miles later found the window and played with the shade for a while. We ate a bunch of snacks and then still had like an hour left. This was the longest flight of my life. As we were approaching Houston Miles was starting to get tired again but would NOT fall asleep.

We finally landed and then sat on the tarmac for a bit waiting for an open gate. Again we were the last ones off the plane. Another trip to the bathroom and baggage claim and then we were on our way home.

So now for the tips:

1. Do not book a stupid early flight. Recipe for disaster.
2. Stroller or leash. Both have pros and cons, but I don’t think Miles would have enjoyed being stuck in the stroller anyways and that would have been one more thing to deal with.
3. Snacks, snacks, and more snacks.
4. Something to watch movies or TV shows on.
5. Just stay home.

luby's select family feast review

This year my boss decided, for those of us who wanted, to buy us a Select Family Feast from Luby's for Thanksgiving. Way cooler than a turkey or gift card because this meant I didn't need to cook. Sweet!

The Select Family Feast serves 4-6 people and comes with the following all for $55.99:

Your choice of:
Whole Roasted Turkey Breast or Spiral Sliced Ham
and
1 qt. Cornbread Dressing
1 pt. Cranberry Sauce
1 qt. Giblet Gravy
1 dz. Dinner Rolls
And your choice of:
Luby's Famous Pecan Pie or Pumpkin Pie

We opted for the turkey breast and pumpkin pie (because I hate ham and was going to make my own pecan pie). I also added on mashed potatoes and macaroni and cheese for $7.99 a quart. You schedule your pickup time when you order. Thinking back, if I could have picked up on Wednesday night, I probably would have done that instead of Thanksgiving morning. Our location didn't appear very organized and it seemed to take much longer than it should have to find my order and bring it to me.

I FORGOT TO TAKE PICTURES! The turkey was packaged in a plastic oven bag so it could go straight into the oven. The sides were packaged in foil containers and also able to go into the oven to reheat. The gravy was in cardboard container and the instructions stated it could be heated in the microwave it was easier to pour out a reasonable amount and heat in a bowl. We also made a few veggies in freezer steam bags to accompany our meal. All in all, it was pretty damn easy and A LOT of food for 2.25 people.

The turkey breast: there was no browning on the turkey, so all the browning we were able to get on the skin came after we liberated the breast from the oven bag and rubbed on some butter and put under the broiler. At this point I was too hungry to care.

The sides: I'm not going to lie the dressing was pretty damn good, and you can't really mess up mac and cheese or mashed potatoes. The gravy was a tad bit salty, but as my husband said, "it's not like you drink a cup of it for dinner." Cranberry sauce...I don't eat cranberry sauce. Miles ate all his and appeared to enjoy it. When asked for comment my husband said, "it was okay." The rolls were pretty damn good, I probably could have polished them all off.

The pumpkin pie: sigh, it was just okay. The bottom crust was really soggy and it made me kind of sad. However, my pecan pie was fan-freaking-tastic. Like you had any doubts.

So there you have it. Was it the best Thanksgiving dinner I've ever had? No. Was it better than some Thanksgiving dinners I've had that were cooked from scratch? Probably. Would I order it again and actually pay money for it? Yes, chances are next year. Mama no like to cook. Although, I might also have a backup pumpkin pie.

fabulous five minute face

Hi all! I am so excited to be the guest blogger for Holly for teach me tuesday!

I have been a beauty consultant with Mary Kay for over 10 years and the number one thing I hear from the ladies I meet, as to why they don’t do makeup in the morning, is because “it takes too long”. Well I am here to tell you that is a falsehood!!! It’s not that it takes that long; it’s that you have never been taught my Fabulous 5! It’s whole face of makeup you can do in under 5 minutes with only 5 products! Can it be any easier?! Get ready to be amazed ladies!!


Ok so the 5 amazing products we will use are:
  1. CC Cream
  2. Cream Eye Shadow
  3. Mascara
  4. Blush
  5. Lipgloss 
So let me give you some quick info on these products:

The CC Cream is an all in one miracle product. CC stands for Color Correcting so this product is a foundation, concealer, redness reducer, color corrector, brightener, moisturizer, and has an SPF 20 ALL IN ONE. Seriously these babies are FLYING off my shelves!! It is one of the best things we have in our line. Can I make it easier for you?! One pump of the product, use your fingers and rub it on your face and all that stuff is DONE. We have 4 perfect match colors. I am using the Light-Med.

Second product is the Cream Eye Shadow. This product is also a winner in my book (Holly can attest- she has some!) This shadow looks just as great at 8pm as it did at 8 am when you put it on. It won’t crease, crack, dry up, get clumpy or any of that other icky stuff some cream shadows do. We have 9 gorgeous colors to choose from so there is definitely one (or more!) that can easily be worn everyday. Today we are using Violet Storm.  

Next the mascara- for this I like to use the Ultimate Mascara- mostly because it’s my favorite. I like the lash love too but I can’t break my loyalty to the Ultimate. This is a powerhouse mascara that won’t flake or dry out and will last all day. I like the black (my blonde lashes are virtually nonexistent) but we do have black-brown too.

Our mineral power blush is next. We have 10 awesome shades to pick from- today I am using the universally flattering shade: Shy Blush. Soft, even wear and a soft velvet finish; you will never wear another blush again.

And finally, we finish up with a bit of our NouriShine lipgloss. Fortified with vitamins A, C and E to keep your lips healthy, it’s an awesome product. Again we have 15 shades so you are sure to find a favorite or two! Today I am using one I can never live without: Fancy Nancy. 

So now we apply!

Step one: Take 1 -1.5 pumps of the CC cream into your fingers and apply it to your face. 

Start with your nose, forehead and cheeks and blend outwards. You want the majority of the product to be in the center of the face and it to blend out towards your hair. Ever see those ladies with the crazy foundation line on their chin? None of that. The color should always be concentrated on your face.


Step 2: Take some of the cream shadow on your pointer finger and smooth it on the lid about three quarters of the way up to your brows.

Step 3: Apply the mascara. (I do two coats, do one if you have darker lashes.)


Step 4: Take a big fluffy brush and apply the blush. Now, yes, you should be smiling. This helps define your cheeks, and (insider trick!) apply the blush DOWN towards your nose from your hairline not upwards.  This helps you have a soft pop of color not an 80’s face color streak.
  
Step 5: Dab on some lipgloss and you are DONE!!



 YOU DID IT!!! See it wasn’t that bad!!



Now how much does this cost? I know you are wondering. All 5 products together cost $75. 

1. I don’t know about you but I can spend that in Target in about 5 minutes on junk I don’t need that has never made me feel better or look better. 
2. These products, when used everyday will last you at least 3-4 months, probably longer for the shadow and blush.
